Aunt Betty Jane’s Swiss Steak and Rice


  • 4-6 pieces cubed steak
  • vegetable oil
  • 1 cup flour
  • 1 large onion, sliced
  • 2 bell peppers, sliced
  • 3 stalks of celery, chopped
  • 1 large can crushed tomatoes
  • salt and pepper to taste


  • 2 Cups of Boiling Water
  • 2 TBS of Salt
  • 1 Cup of White Rice





Swiss Steak

Salt and pepper flour and dredge cube steak in mixture.  Heat oil in large skillet.  Saute onion, peppers, and celery in the oil.  Add large can crushed tomatoes and simmer.  In another skillet, brown steak in oil.  Once done, place steak in vegetable mixture.  Add salt and pepper.  Simmer until tender.  Serve over rice.


Put water and salt into a pot and bring to a boil. Add Rice and then bring to boil again, turn down to low and let it cook slowly until water has cooked out and rice is soft.
