Greek Almond Cookie


  • 1 cup butter (softened)
  • 3/4 cup sugar
  • 1 egg
  • 1/2 teaspoon vanilla
  • 1/2 teaspoon almond flavoring
  • 2 1/4 cups plain flour
  • 1/2 cup crushed almonds (optional)


Preheat oven to 400°. Grease cookie sheet. Mix cream butter, sugar, and egg well. Stir in flavorings. Mix flour and crushed almonds well. Add flour mixture a little at a time until well blended. Roll 1 teaspoon of dough and roll into a log and then shape into an S. Place a cookie sheet 1 inch apart and bake for approximately 10 minutes. When cookies have cooled, roll in confectioner’s sugar.

Hint: This cookie makes a wonderful sundae. Shape dough into round balls and bake. When cooled roll in confectioner’s sugar. Top with a premium vanilla ice cream. Drizzle with honey and top with toasted almonds. Yum!
