Italian Salad and Chicken Bryan from Copy Cat Italian episode


Italian Salad

  • 3 hearts of romaine lettuce chopped
  • 3 Roma Tomatoes sliced thin
  • 1 Cup of Olives
  • 1/2 Red Onion sliced thin
  • 1 Cup of seasoned Crutons
  • 1/4 cup of Parmesan


  • 1 teaspoons of Minced Fresh Garlic
  • 1/2 Cup of Mayonnaise
  • 1/3 Cup of White Vinegar
  • 1 teaspoon of Canola Oil
  • 1/2 teaspoon of Italian Seasoning
  • 1/2 teaspoon of dried parsley
  • 1 tablespoon of light corn syrup
  • 1/4 Cup of Grated Parmesan
  • 1 TBS Lemon Juice

Chicken Bryan

  • Olive Oil
  • 4 Boneless Skinless Chicken Breast
  • Pepper
  • Salt
  • 8 oz of Goat Cheese

Sun Dried Tomato Sauce

  • 2 TBS Butter
  • 2 Cloves of Garlic minced
  • Small Onion minced
  • 3  two-ounce packages of sun dried tomatoes chopped
  • 1/4 Cup of Lemon Juice
  • 1/2 Cup Dry White Wine
  • 1/4 Cup of Fresh Basil Leaves Roughly Chopped
  • 10 TBS of Butter



Salad and Dressing: In large salad bowl combine all the ingredients for the Salad and sit aside. Mix all the ingredients for the Dressing and Whist until creamy, then sit aside to pour over salad just prior to serving.

Chicken Bryan: Add a little olive oil to cast iron grill pan. salt and pepper chicken breast until they are brown on each side and the juices run clear. Once done add 2 ounces of goat cheese to each breast. Plate and then spoon sauce over chicken.

Sun Dried Tomato Sauce: In skillet on top of oven begin on medium heat, melt 2 TBS of Butter then add garlic and sun dried tomatoes, once onions are transparent add lemon juice, wine and cook until liquid reduces by half. Reduce heat Add 10 more TBS of butter but add one TBS at a time, continue to stir. Add basil and stir and continue cooking on low heat.
