Spinach Casserole and Rolls from Mexican Meat and Gravy Episode

Ingredients

Spinach Casserole

  • 2 Pounds of Fresh Spinach
  • 6 TBS Butter
  • Cup of Whole Milk
  • 2 Cups of Swiss Cheese
  • 2 TBS
  • 1/2 pint heavy cream
  • Garlic
  • 1/2 cup of cooking sherry
  • Cup of Break Crumbs
  • Cup of Parmesan Cheese

No Yeast Rolls

  • 1 Cup of Plain Flour
  • 1 tsp of salt
  • 2 TBS of Mayonnaisse
  • 1 tsp of Baking Powder
  • 1/2 Cup of Milk
  • Cooking Spray

 

 

 

Directions

Spinach Casserole

Wilt spinach is fry pan, when done, drain off liquid on paper towel. Melt butter in sauce pan, turn down heat and add flour to make a rue. Stir Add salt and pepper. Stir. Add milk and 1/2 pint of heavy cream, stir frequently. Add chopped garlic and Swiss cheese. Stir. Put 2 Tables of butter in a skillet, heat and add onions and mushrooms, add 1/2 cup of cooking sherry. Add drain Spinach. Stir. Add Cheese sauce and stir well. Place in casserole dish. Melt 2 Tbs butter in microwave. Sprinkle breadcrumbs and Parmesan cheese on top. Pour butter over the top. Bake in oven at 350 degrees until brown on top.

No Yeast Rolls

Preheat oven to 350 degrees. Mix all ingredients. Spray muffin pan. Dip Batter into pan and bake for 15 minutes.
