Appetizers – Charcuterie Board, Vidalia Onion Dip, Mini Hamburger Sliders

Ingredients

Charcuterie Board

  • Sharp Cheddar Cheese Block
  • Mozzarella Cheese Block
  • Smoked Provolone quartered
  • Blueberry and Vanilla Goat Cheese
  • Pumpkin Goat Cheese
  • Brie Cheese (leave rind on cheese)
  • Dried Dates
  • Rolled Sliced Roast Beef
  • Cubed Ham
  • Sliced Green and Red Apples
  • Green Seedless Grapes
  • Red Seedless Grapes
  • Blueberries
  • Cantaloupe Chunks
  • Strawberries
  • Sliced Pears
  • Pepperoni
  • Roasted Pecans
  • Black Olives drained
  • Green Olive drained
  • Pickled Okra
  • Kosher Dill Pickles
  • Water Crackers
  • Melba Rounds
  • Baby Gerskin Sweet Pickles
  • Fresh Herbs (Sage, Rosemary, Basil)

Vidalia Onion Dip

  • 3 medium to large onions sliced
  • 2 TBS Olive Oil
  • Large package of Cream Cheese
  • 16 ounces of Sour Cream
  • 8 ounces of Mayonnaise
  • Salt
  • Pepper

Mini Hamburgers

  • Can of French Bread
  • Flour
  • 1 TBS Olive Oil
  • 1.5 pounds of ground round
  • 1.5 pound of ground chuck
  • 1.5 TBS Garlic Salt
  • 1 TBS Seasoning Salt
  • Romaine lettuce Chopped
  • Cherry Tomatoes Sliced in halves
  • Mild Cheddar Sliced Cheese quartered into small squares.
  • Sliced Avacado
  • Salt
  • Pepper

 

Directions

Charcuterie Board: Arrange ingredients on large board or trough, spread around colors to make pretty and add fresh herbs as a garnish.

Vidalia Onion Dip: Heat oil in skillet on medium heat, add onions and saute’ for fifteen minutes. Stir occasionally. Let Cool. In a mixing bowl, blend cream cheese, sour cream, mayonnaise, salt and pepper with mixer. Add cooled onions. Serve with pita chips or in a bread bowl.

Mini Hamburgers: Grease Cookie Sheet and turn on oven to 350. Use rolling pin to smooth out dough, add a little flour so that rolling pin does not stick to dough. Use the top of a spice jar to make the round buns. Put on cookie sheet and bake for 10 minutes. Mix hamburger meats and salt and shape into small patties. Place in skillet, cook on one side and then flip. Add Cheddar Cheese. Place lid on and let steam so cheese melts into burger. Put mayo on bun, then stack burger, letter, avacado, tomato, salt and pepper, top with mini bun and hold together with toothpick.
