Bacon Wrapped, Stuffed Duck Breast, Wild Rice and Fried Sweet Potato

Ingredients

Bacon Wrapped Stuffed Duck Breast

  • Allegro Marinade
  • Mallard Duck Breast
  • Bacon
  • Honey
  • Pepper Jack cheese
  • Clowney Seasoning Salt
  • Butter.

Wild Rice

  • 4 Cups of Water
  • 2 Cups of Wild Rice
  • Butter
  • Clowney Seasoning

Fried Sweet Potatoes

  • Sweet Potatoes (peeled)
  • Olive Oil
  • Salt
  • Sugar

Directions

Bacon Wrapped Stuffed Duck Breast: Soak Duck Brest in Allegro Marinade for 24 hours. Cut a pocket in the middle of the duck breast. Sprinkle Clowney seasoning on inside of pocket and on the outside of the duck. Place a strip of pepperjack cheese in the pocket.  Drizzle honey inside the pocket. Wrap breast around duck breast. Melt butter in skillet. Place breast in skillet. After it fries in skillet for a little while, then place in oven to finish cooking. When the bacon is fully cooked, the duck will be ready as well.

Wild Rice: Put 4 cups of water in large pot and bring to a boil. Add rice and bring back to a boil. Add butter and seasoning. Stir and continue to cook.

Fried Sweet Potatoes: Peel and slice Sweet potatoes. Add olive oil to skillet and heat. Add salt to potatoes and once oil is hot drop potatoes into the skillet. Drain on a paper towel. Sprinkle with sugar.
