Beach Breakfast

Ingredients

Grits

Ingredients:

1 cup Grits

4 cups Water

Salt to taste

 

Fried Smoked Jowl

Ingredients:

6-8 slices of Butts meat

½ cup Flour

½ cup Vegtable Oil

 

Fried Potatoes

Ingredients:

3 or 4 Large Red Skin Potatoes

Salt and Pepper

 

Scrambled Eggs

Ingredients:

8 Eggs (to feed 4)

3 Spring Onions sliced

Salt and Pepper to taste

 

 

Directions

Grits

Boil four cups of water. Add one cup of grits, stirring to prevent lumps and salt to taste. Leave to simmer until thickened.

 

Fried Smoked Jowl

Soak Butts meat in water overnight. Before cooking, dredge Butts meat in flour, then cook in oil until brown and crisp.

 

Fried Potatoes

Boil or microwave potatoes until done (night before so they will be cool). Slice in quarter inch slices. Using the grease left from frying Butts meat, fry the potatoes until browned and crispy around edges. Sprinkle with salt and pepper.

**Left over baked potatoes can also be used.

 

Scrambled Eggs

Pour most of the grease out of frying pan.  Add onions and cook lightly.  Next, add whisked eggs and cook to desired doneness. Add salt and pepper to taste.

Slice tomatoes and plate.
