Best Meat Loaf Ever – Comfort Foods 2011


  • 2 to 3 lbs of ground beef (I recommend ground chuck)
  • 1/2 cup onion
  • 1/3 to 1/2 cup bell pepper
  • 3 or 4 slices white bread OR 1 cup bread crumbs
  • 1 egg
  • 1 cup ketchup
  • 1/4 cup yellow mustard
  • Salt and pepper to taste if desired
  • 1/4 cup ketchup


Mix ground beef and bread together.  Add a beaten egg and mix.  Add onion, bell pepper, ketchup, salt and pepper.  Mix well.  Pour into a greased casserole dish and shape into a loaf.  Spread about 1/4 cup ketchup over the top of the meat loaf.  Cook at 350° for about 45 minutes. Cool slightly and slice.
