Birthday Cake

  • Box Cake Mix
  • Cup of Whole Milk (use instead of water as box calls for)
  • Instant Vanilla Pudding Mix
  • Teaspoon of Vanilla Flavoring
  • 1/3 cup of Canola Oil
  • 4 Eggs



  • 1 Stick of Softened Salted Butter
  • 1 1/2 Cups of White Shortening (You can also substitute cream cheese)
  • 2 lb Bag of Confection Sugar
  • 1 Cup of Cocoa
  • Water
  • Teaspoon of Vanilla Flavoring



Preheat oven to 325 degrees. Mix cake mix, milk, instant pudding, vanilla flavoring, oil, and 4 eggs until blended and smooth. Pour into pre-sprayed cake pans, half batter in one and the other half in the second pan. Add 5 to 7 minutes of baking time to whatever time box mix instructions say to bake. Once cake is done, sit on counter to cool and then place in freezer for at least 10 minutes before icing it.


Mix butter and shortening or cream cheese until blended well. Sift powdered sugar and cocoa. Add to Mixer on low speed. Add just a little water and continue mixing. Add vanilla flavoring and a little more water if needed. Mix until icing is smooth.

Put a dollop of icing on cake and begin a crumb coat where you start icing side of cake first and continue adding dollops of icing until the cake is coated completely. Let set and then put on second layer of icing. Decorate if desired.
