Black Bean Salad


  • 2 cans black beans (rinsed well)
  • 16 oz frozen white corn
  • 1 green bell pepper (chopped)
  • 1/2 large red onion (diced)
  • 1-2 avocados (peeled and cubed)
  • 3-4 Roma tomatoes (diced)
  • 1 bunch cilantro (chopped)
  • 1/4 cup extra virgin olive oil
  • 1/4 cup fresh lime juice
  • 2 teaspoons garlic (minced)


Combine black beans, corn, bell pepper, onion, tomatoes, and cilantro. Mix well. Add avocado and mix gently. Combine olive oil, lime juice, and garlic. Whisk together and pour mixture gradually into veggie mixture and mix.
