Broccoli Cornbread

Ingredients

  • 2 boxes of Jiffy corn muffin mix
  • 4 eggs
  • 1 10 oz package of chopped broccoli (thawed and drained)
  • 12 oz cottage cheese
  • 1 large onion (chopped)
  • 1 1/2 sticks of butter (melted)

Directions

Mix ingredients well. Pour into a greased 13×9" casserole or baking pan. Bake at 400° for about 16 minutes, and then reduce oven to 350° and bake for about 30 minutes or until firm and golden brown.
