Buffalo Sloppy Joes and Apple Fritters

Ingredients

Buffalo Sloppy Joes

  • Cup of Chopped Bell Pepper
  • Diced Onion
  • Stick of Butter
  • Pork Belly Smoked Bacon
  • Ground Buffalo Meat
  • Large Can of Dice Tomatoes (drain off juice)
  • Small Can of Cream of Mushroom Soup
  • Medium Size Can of Tomato Paste
  • 2 Bell Peppers (hollowed)
  • 2 TBS Sugar

Apple Fritters

  • 2 Apples
  • Can of Crescent Roll Dough
  • 1/3 Cup of Sugar
  • Stick of Butter
  • Mountain Dew Cola

Directions

Buffalo Sloppy Joes: In Cast Iron Pot, add peppers, onion and butter and let heat. Cut pork smoked bacon and slice in thick slices but don’t cut through skin, once slices are slit then cut across skin starting in the middle. Put the pork belly in a separate skillet and heat to fry. Remove pieces of pork belly when done and spoon in buffalo meat into the bacon grease. Once Buffalo meat is brown, drain on paper towel. In pot with onions and peppers add diced tomatoes after you drain off the juice, add cream of mushroom soup and the browned buffalo meat. Stir then add Clowney’s seasoning salt and stir again. Cut top out of Bell pepper and then trim around core to get inside membrane and seeds out. Serve part of buffalo stew over rice and add a little cheddar cheese and stir, then stuff into hollowed out bell peppers. Bake peppers in oven on 375 for 10 to 15 minutes. Then to the rest of the Buffalo stew add a medium size can of Tomato Paste and sugar and stir well and let heat. Serve on a bun.

Apple Fritters: Peel Apples, remove core and slice into six pieces. Roll out dough, take one of the triangle and roll it around apple piece and tuck in tail and place in baking pan. In a bowl add sugar and butter and microwave. Stir well and spoon over the top of each rolled up apple. Take a mountain dew cola and pour around pan but not on top of apple. Bake in oven at 400 for 15-20 minutes.
