Chopped Salad


Romaine and or Iceberg lettuce (chopped small)

1 cucumber (diced)

1 red bell pepper (diced)

3 to 4 small green onion stems (diced)

2 roma tomatoes (diced)

Handful of cranberries

Handful of walnuts

Dressing Ingredients:

1 avocado

1 lemon 

2 cloves of garlic



Red wine vinegar

Olive oil

1 cup sour cream


Begin with the ingredients for the chopped salad. Simply make sure all of the veggies and lettuce are finely chopped and diced. No need to chop cranberries or walnuts they are small enough. Place into bowl and mix throughly. For the homeade dressing cut open avocado and place into small serving bowl. Mash avacado until pasty. Chop garlic cloves and mash hard to get them as small as possible. Mix the garlic into the avacado, then cut lemon and squeeze into mix. Add splash of red wine vinegar, a couple of splashes of olive oil, and salt and pepper. Whisk in sour cream and stir until the ingredients are fully mixed. Mix in avacado dressing to the chopped salad and enjoy this healthy, savory dish!
