Cranberry Almond Biscotti -The Cookie Show 2010


  • 1/4 cup olive oil
  • 3/4 cup sugar
  • 2 teaspoons vanilla
  • 1 teaspoon almond flavoring
  • 2 eggs
  • 1 3/4 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1 teaspoon baking powder
  • 1 cup dried cranberries
  • 1 1/2 sliced almonds


Mix together oil and sugar.  Add vanilla and almond flavoring.  Beat in eggs.  Combine flour, salt and baking powder and add to mixture.  Mix in cranberries and almonds.  Divide dough into halves and form 2 logs on a lightly greased cookie sheet.  The dough will be sticky, so wet your hands with water to handle.  Bake in a 300° oven for about 30-35 minutes.  Let cool.  Reduce oven to 275°.  Cut the logs into 3/4 inch slices.  Lay pieces on side on cookie sheet and bake for an additional 10 minutes.
