Ingredients

Smores Cookie Cups

  • Cup of Graham Crackers finely ground up
  • 1 Roll of Sugar Cookie Dough
  • Add a 1/4 Cup of water and bring to a boil, put a glass bowl on top (or use a double boiler if you have one)
  • 1/2 Cup of Semi Sweet Chocolate Chips
  • 1/4 Cup of Heavy Cream
  • Heat a Cup of Hot Water in the microwave
  • Marshmallow Fluff

Lemon Curd Tarts

  • 1 Stick of salted butter
  • 1/2 Cup of Honey
  • 2 TBS Lemon Zest
  • Cup of Lemon Juice
  • Six Eggs
  • 2 Egg Yolks
  • Baked Filo Cups

Cake Frosting:

  • 1 8 oz package of cream cheese
  • 1 stick of salted butter
  • 2 pounds of confectionate sugar
  • 1 tsp of vanilla flavoring
  • 1/4 Cup of Milk

Parfaits

  • Box Brownie Mix
  • Vanilla Pudding
  • Almond flavoring
  • Whipped topping

 

Directions

Smores Cookie Cups: Mix ground up graham crackers and cookie dough by hand, take a ball of dough and put in mini cupcake pan. Bake at 350 for 7 to 9 minutes.  Make a chocolate sauce using the double boiler to melt chocolate chips combined with heavy whipping cream. Remove cookie dough from oven. Use a cookie press or something similar to press a indention into the center of the cooked dough. Let Cool. Then using a teaspoon put a little chocolate sauce into each cup, using hot water that was microwaved, dip a teaspoon into the hot water and then into the marshmallow fluff to add to each cup,  put back in oven on broil for just a minute or two and then top with a Hersey’s kiss.

Lemon Curd Tarts: Combine all ingredients with a whist. Sit bowl on top of pot of water that has been brought to a boil and continue to stir with whist until it makes a custard. Add a teaspoon of lemon custard to an already baked filo cup. Top each with a blueberry or a quarter of a strawberry. You can add whipped cream if desired.

Cake Frosting: With hand mixer combine cream cheese and butter, slowly add confectionate sugar, add vanilla flavoring, then add milk and continue to mix. Ice cake with a thin layer first, called a crumb coat, let sit up for a few minutes, Add frosting coat and let sit up for a few minutes. Put tip in icing bag and fill with icing to make stars or curves.

Parfaits: Follow instructions on box brownie mix and then after baking, crumble the brownie into large pieces. Follow the instructions on vanilla pudding box. To parfait glass, add brownie then pudding and repeat. Can be topped with whipped cream, slivered almond and a cherry.
