Fancy Grilled Cheese Sandwich and Tuscan Soup


Tuscan Soup

  • 1/2 Pound of Carrots chopped
  • Olive Oil
  • Onions Chopped
  • 2 Cans on Cannellini beans (White Kidney Beans)
  • 32 oz Chicken Broth
  • 3 TBS Italian seasoning
  • Salt
  • Pepper
  • Baby Spinach

Grilled Cheese Sandwich

  • 4 pieces of bacon per sandwich
  • Bacon grease
  • Sourdough Bread
  • Red Onion Sliced
  • Cheddar Cheese Slices
  • Provolone Cheese Slices



Tuscan Soup: In stock pot atop stove on high heat, cover bottom with olive oil, add carrots, onion and saute’. Add beans and mash up a little to thicken broth. Add 32 oz chicken broth, 3 TBS Italian seasoning, sprinkle a little salt and pepper. In a separate skillet, add olive oil and heat, add bag of baby spinach and saute. Once spinach is cooked add to stock pot and let everything cook for 30 more minutes.

Grilled Cheese Sandwich: Fry bacon and drain grease and sit aside, leaving a touch of bacon grease in frying pan. Slice red onion and put in frying pan, stirring occasionally. On slice of bread add two slices of cheddar cheese, four pieces of bacon, and sauteed onion. Add two slices of provolone cheese and cover with second slice of bread. Put a little more bacon grease in frying pan. Put sandwich in frying pan and brown on one side and flip and brown the other side.
