Homemade Cream Soups and Panini Sandwich


Cream of Mushroom Soup

  • 1/4 Cup of TBS Olive Oil
  • 1/2 Cup of Salted Butter
  • 1/4 Cup of Scallions
  • Cup of Onion (Chopped Small)
  • 3 Cloves of Garlic Chopped finely
  • Salt to taste
  • Pepper to taste
  • 2 Cups of Mushrooms (You can use celery to make cream of celery, chicken to make cream of chicken, potatoes to make cream of potatoes, tomatoes to make cream of tomato-use basil and oregano seasoning if making cream of tomato.
  • 32 oz of Chicken Broth
  • 3 Cups of Milk
  • Pint of Heavy Cream
  • Cornstarch to thicken Soup

Panini Sandwich

  • Thick Sliced Bread
  • Pesto Sauce
  • Sliced Ham
  • Mozzarello Cheese
  • Basil Leaves
  • Sliced Tomato
  • Salt
  • Pepper
  • Spinach Leaves
  • Olive Oil
  • Butter



Cream Soup: In a large skillet heat olive oil and butter, add scallions, onions, garlic, salt and pepper. Add mushrooms and continue to stir and saute’. In a large stock pot, Add chicken broth and milk and heat. Add sauteed vegetables. Stir, then add heavy cream and let simmer.

Panini: Start with two slices of thick bread, spread on pesto sauce, add two slices of ham, cheese, leaf of basil, slice of tomato, salt and pepper and top with spinach, brush inside of other piece of olive oil. Melt a little butter on grill pan, place sandwich in pan and hold down top with a plate. Flip and grill the other side of bread.
