Hummingbird Cake, Ham Pie, Spring Salad and Deviled Eggs

Ingredients

Hummingbird Cake

  • 3 Cups of All Purpose Flour
  • 2 Cups of Sugar
  • tsp of Baking Soda
  • tsp of Salt
  • tsp of Cinnamon
  • 8 oz can of Crushed Pineapple with juice
  • 1.5 Cups of Vegetable Oil
  • 3 large eggs beaten
  • 2 Cups of Ripe Bananas chopped into small pieces and mashed (3-4 bananas)
  • 1 Cup of Chopped Pecans

Icing

  • 2 Packages of Cream Cheese
  • 2 Sticks of Butter
  • 1 tsp Vanilla Flavoring
  • 2 Pounds of Powdered Sugar

Ham Pie

  • 1/3 Cup of Butter
  • 1/2 tsp Salt
  • 1/4 tsp Ground Mustard
  • 1/3 tsp Pepper
  • 1/4 Cup of All Purpose Flour
  • Cup of Whole Milk
  • TBS of minced onion
  • 2.5 Cups of ham cubed
  • 1 Cup of green peas
  • 2 boiled eggs chopped
  • Ready made pie crust dough

Simple Salad

  • 1/2 pound Baby Spinach
  • 1/2 Red Onion
  • 1/2 Cup Granny Smith Apples
  • 1/2 Cup Strawberries
  • 1/3 Cup Blueberries
  • Salt
  • Pepper
  • 1/3 Cup Dried Cranberries
  • 1/3 cup Honey Roasted Pecan pieces
  • 2 TBS Pomegranate Vinaigrette Dressing

Deviled Eggs

  • Eggs
  • Quirt of Mustard
  • Mayonnaise
  • Salt
  • Carrot pieces
  • black olive dots

Directions

Hummingbird Cake: Mix flour, sugar, baking soda, salt and cinnamon and whist until everything mixes well. In a separate bowl, add pineapple, oil. Beat eggs and add to oil and pineapple. Add mashed bananas. add pecans. Mix well. Then in a large bowl Put 1/3 of dry mixture and 1/3 of wet mixture and beat with a hand mixture, continue to add rest of dry and wet mixture and continue to mix together. Grease and flour three cake pans, pour 1/3 of batter into each pan. Bake in oven at 350 degrees for 30 minutes.

Icing: With hand mixer mix cream cheese and butter. Add vanilla flavoring and powered sugar and mix well. Stack cake and place icing between each layer. For top layer do a crumb coat. Let sit and then ice top and sides.

Ham Pie: In a stock pan put a 1/2 stick of butter to melt, stir often, do not burn butter. Add salt, mustard, pepper, stir well, add flour and continue to stir. Add milk slowly and continue to stir. Add minced onion, add ham, add peas, add eggs and stir. Pour into casserole dish. Use a ready made pie crust. Put flour on cutting board, unroll pie dough, and take rolling pin and smooth and stretch so it easily fits over casserole, put slits in crust. Bake in oven on 325 degrees for 30 minutes.

Deviled Eggs: Boil and peel eggs and cut in half, pop yolks into a bowl, add mayonnaise, mustard and salt and stir until well mixed and pipe or spoon into split eggs. Can be decorated with tiny pieces of carrot for a beak. Add small dots of black olives to form eyes. Add pieces of parsley for tail feathers.

Simple Spring Salad: Spread baby spinach in salad bowl. Slice the red onion into thin slices and remove center piece and spread rest of onion on top of salad, cut apple into skinny pieces, remove core. Wash strawberries, remove stem and slice berries into pieces, add blueberries, cranberries and pecans. Drizzle top with dressing and toss.
