Joseph Manczka’s Red Pepper Pork Chops

Ingredients

  • 1-2 lbs. of boneless, thick-cut pork chops (2-4 chops)
  • 1 jar of roasted bell peppers (red)
  • 1 8oz. bag of shredded mozzarella cheese
  • Garlic powder (just a pinch)
  • Thyme (just a pinch)
  • Rosemary (just a pinch)
  • Oregano (just a pinch)
  • Salt and pepper (very light on salt if any at all)
  • Parsley

Directions

Preheat oven to 350°. Coat a pan with Pam or lightly butter. Lightly coat both sides of each pork chop with garlic powder, thyme, rosemary, oregano, salt, and pepper. Evenly apply one side of pork with roasted bell pepper (red). Sprinkle mozzarella cheese to create thin to medium layer over pepper. Place on baking sheet in oven and cover with aluminum foil for 45 min or until pork reaches 165°. Remove foil for last 15 min to brown cheese. Take out of oven and cover to rest, and sprinkle with parsley.
