Low Fat, Low Calorie Chicken Dish and Homemade Chocolate Pudding


Low Fat, low calorie Chicken Dish

  • 1 large onion
  • 1 pouch of instant brown rice
  • 3 boneless, skinless chicken breast.
  • 1 can of diced tomatoes
  • 1 can of tomato sauce
  • Salt
  • Pepper
  • Garlic Powder
  • 2 Yellow Squash sliced
  • Green Bell Pepper chopped
  • Cup of Mozzarella Cheese
  • Cup of Parmesan Cheese

Low Calorie Chocolate Dessert

  • 1 1/3 Cup of Low Fat Milk
  • 1/3 Cup of Sugar
  • 2 pinches of Salt
  • 2 Tbs Corn Starch
  • 1/3 Cup Sugar
  • Cup of Cocoa
  • 3/4 Cup of low fat milk
  • Tempered egg
  • 1 tsp of vanilla
  • Lite whipped cream


Low fat, low calorie chicken casserole

Add rice to bottom of casserole dish, add chicken, salt, pepper, garlic powder, add diced tomatoes, onions, squash, green pepper, a little more salt. Add tomato sauce and Cheese. Cover with tin foil. Bake at 375 degrees for 1 hour.

Low calorie Chocolate Dessert

Homemade chocolate pudding: 1 1/3 cup of milk in medium sauce pan, 1/3 cup of sugar, 2 pinches of salt, stir on medium heat until it simmers, stirring occasionally. In separate bowl, add 1/3 cup of sugar, corn starch, cocoa, 3/4 cup of low fat milk, stir and whist until it mixes well.  Add cocoa mixture to sauce pan, and cook for 3 minutes. Put egg in bowl used for cocoa to temper. Pour a little of the hot mixture and whist egg until it is well mixed and them pour into sauce pan. Add 1 tsp of vanilla. Simmer for 5 minutes.  Top with lite whipped cream.
