Mexican Lasagna, Guacamole, Fajitas and Margarita Fruit Dessert

Ingredients

Mexican Lasagna

  • 1/4 Cup Cilantro
  • 4 Chicken Breast Shredded (Boiled with a bay leaf)
  • 2 tsp Garlic Powder
  • 1 TBS Cumin
  • 2 tsp Red Pepper
  • 1/2 Cup of Chopped Onions
  • Small Can of Crushed Tomatoes
  • Can of Whole Kernel Corn (drained)
  • Can of Black Beans (drained)
  • Flour Tortillas
  • 2 Cups of Mexican Blend Cheese
  • Sour Cream

Guacamole

  • 1/2 of Red Onion (Chopped Finely)
  • 3 ripe avocados (peeled and pitted)
  • 1/2 Cup of Picante Sauce
  • 1 cup sour cream
  • 1/2 cup chopped fresh cilantro
  • 1 tsp Salt
  • 1/2 tsp Cumin
  • 1/2 tsp Garlic

Fajitas

  • 2 Large Chicken Breast Cut into strips (Serves 3-4)
  • Sprinkle of Salt
  • Sprinkle of Cayenne Pepper
  • Sprinkle of Cumin
  • Olive Oil
  • Green Bell Pepper Sliced
  • Sliced Onion
  • 6 Flour tortillas

Dessert

  • Kiwi
  • Lime
  • Gala Smith Apple
  • Granny Apple
  • Nectarine
  • Strawberries
  • Lime Zest
  • Juice of Lime
  • 1/2 Cup Sugar
  • Separate 1/2 Cup of Sugar
  • 2 Splashes of Tequila
  • Cool Whip

 

Directions

Mexican Lasagna: Boil Chicken breast with a bay leaf, remove chicken and shred. In a bowl add 1/4 Cup of Cilantro, garlic, cumin, red pepper, onions, tomatoes, corn and black beans and stir to mix well. Line Casserole dish with 2 large flour tortillas. Spoon in 1/2 of the chicken mixture. Cover with two more tortillas and spoon on 2nd layer of chicken mixture. Cover with 1 Cup of cheese. Bake in oven for 30 minutes at 350 degrees. Then add other cup of cheese and put in oven until cheese melts.

Guacamole: Put all ingredients in mixing bowl and mix well and put in refrigerator to chill.

Fajitas: Cut Chicken into strips and sprinkle with salt, cayenne pepper, and cumin. Heat Olive oil in skillet and Place chicken in the cook. Flip occasionally. Chop green bell pepper and onions. When chicken is done push to sides of skillet and add peppers and onions in center of skillet to saute’ Heat tortillas on baking sheet in oven on 350 for 10 minutes. Wrap in tin foil when they come out of oven.

Margarita Fruit Dessert: Chop Fruit and put in bowl with 1/2 Cup of Sugar. Zest lime and then squeeze lime juice into bowl. Add Tequila and mix up. Dip parfait glasses in separate bowl of sugar. Spoon in fruit. Add a dollop of cool whip and a lime slice to rim of glass
