Mushroom, Pepper and Onion Fritatta – Brunch Episode


  • 2 dozen eggs
  • 1 bunch green onions
  • 1/2 green bell pepper
  • 1/2 red bell pepper
  • 1 1/2 cups sliced mushrooms (your favorite)
  • 1 teaspoon garlic powder
  • 1/2 teaspoon dry mustard
  • Salt and pepper to taste
  • 1 cup sharp cheddar cheese
  • 3/4 cup mozzarella cheese


Directions: Beat eggs. Mix in garlic powder, dry mustard, salt and pepper. Add shredded cheeses reserving 1/4 cup of cheddar. Mix. Add chopped onions (use the green ends), the julienne peppers and the sliced mushrooms. Mix gently. Pour into skillet or dish. Sprinkle remaining cheddar cheese over the top. Bake in oven at 350º in a large ovenproof skillet or rectangular shaped baking dish (13×9″) until knife inserted in center comes out clean. Cooking time will be approximately 20 to 30 minutes depending on the size pan you use.
