Ingredients
- 1 lb dried kidney beans
- 1 lb Polish kielbasa
- 2 bay leaves
- 3 cloves garlic (minced)
- 2-3 tablespoons Cajun seasoning
- 1/2 cup diced onion
- 1/2 cup diced celery
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 ham hock or smoked neck bone
Directions
Long-grain rice cooked according to package directions. Bring kidney beans to a boil. Drain and rinse. Put back into pot and cover with water. Add ham hock, bay leaves, celery, onions, Cajun spice, garlic, salt and pepper. Bring to a slow boil. Turn down to medium heat and simmer until beans are tender (about 2-3 hours). Slice kielbasa and add to beans. Heat through. Serve over long-grain white rice.
