Red Velvet Cake With Cream Cheese Frosting from Christmas 2014

Ingredients

 

  • 2 sticks of unsalted butter (softened at room temp)
  • 2 cups of sugar
  • 2 cups of cream
  • 4 eggs
  • 3 tsp vanilla extract
  • 2 TBs of cocoa
  • 1 oz of red food coloring
  •  2 1/2 cups of cake flour
  • 1/2 tsp salt
  • 3 tsp of baking powder
  • 1 cup of buttermilk
  • 4 oz of unsalted butter
  • 8 oz of cream cheese
  • 2 cups of powdered sugar

Directions

Combine 2 sticks of unsalted butter (softened at room temp) and 2 cups of sugar and cream with mixer. Add 4 eggs one at a time mix after each one. Add 2 tsp vanilla extract in a separate bowl mix well 2 TBs of cocoa and 1 oz of red food coloring. Then add to batter. Shift together 2 1/2 cups of cake flour with 1/2 tsp salt and 3 tsp of baking powder. Add 1/3 of mixture at a time to batter mixing well each time. Add 1 cup of buttermilk. Grease 4 cake pans or use baking non-stick spray). Add an even amount of batter to each pan. Bake at 350 for 30-35 minutes.

Cream Cheese frosting

Beat together 4 oz of unsalted butter and 8 oz of cream cheese. Add slowly 2 cups of powdered sugar, mix on low speed. Add 1 tsp vanilla. Ice cake after the cake cools
