Shrimp Orzo Pasta Salad and Steak Salad from Salad Trio Episode


Shrimp Orzo Pasta Salad

  • English Cucumber Diced
  • Orzo Pasta Cooked and Cooled
  • 6 oz Cherry Tomatoes slit into 2 pieces each
  • Cup of Scallions
  • 6 oz of Feta Cheese Crumbled
  • Salt
  • Pepper
  • 2 TBS Fresh Dill Finely Chopped
  • 1/4 Cup of Olive
  • 1 TBS White Wine Vinegar
  • 3 TBS Dijon Mustard
  • 1 TBS Mayonnaise
  • 8 to 12 oz of Shrimp (Shelled and deveined) Chopped

Steak Salad

  • 1 lb lean sirloin (cook on griddle with a little olive oil
  • Cup Sour Cream
  • 2 TBS Crumbled Blue Cheese
  • 1 TBS Fresh Basil Chopped
  • 1 tsp Fresh Garlic Chopped
  • Salt
  • Pepper
  • Cup of milk (Add slowly)
  • 2 TBS Olive Oil
  • 2 Cups of Baby Argula
  • 2 TBS Fresh Basil
  • 1 tsp fresh garlic
  • Thin slices of red onion
  • 1/2 cup Cherry Tomatoes sliced into two half
  • Pears (Chopped)










Orzo Pasta Salad: Cook and cool the orzo pasta and sit aside, In a large bowl combine diced cucumber, cherry tomatoes, scallions, feta, salt and pepper and sit aside. For the Dressing combine wine vinegar, dijon mustard, and mayonnaise and mix well then add dill and mix again. Combine everything together including Cook shrimp cut into pieces.

Steak Salad: Cook steak on griddle until desired temperature, typically 2 to 4 minutes on each side. On each dinner plate put a cup of baby arugula greens, add Cherry tomatoes halves, basil, garlic , red onions, crumbled blue cheese and pears. For the Salad Dressing: combine sour cream, 2 TBS Blue Cheese, 1 tsp fresh garlic, salt and pepper to taste, slowly add milk and stir constantly, Add 2 TBS Olive oil. One it is mixed well set aside. Once steak is done let it rest a while. Trim fat and slice into strips, put atop salad and drizzle with salad dressing
