Spaghetti and Meatballs

Ingredients

Sauce and Meatballs

  • Olive Oil
  • Several Cloves of Garlic (Chopped)
  • 1 Pound of Italian Sausage in casing
  • 2 TBS Basil
  • 2 TBS Italian Seasoning
  • 1 TBS Fennel
  • 4 Large Cans of Tomatoes
  • 2 Medium size Cans of Tomato Paste
  • 2 Medium size Cans of Water
  • 1 pound of ground round
  • 1/2 pound of ground chuck
  • 2 Eggs
  • 3 Three cups of Italian Breadcrumbs

Anti-pasta Salad

  • 2 Cups of Boiling Water
  • 2 TBS Sugar
  • 3 TBS of Red Wine Vinegar
  • 2 Pinches of Salt
  • Small Red Onion (Chopped finely)
  • Romaine Lettuce
  • Flat leaf Parsley
  • Artichokes
  • Roasted Red Peppers
  • Black Olives
  • Cherry Tomatoes
  • Peppers Arcenni (remove stems)

Dressing

  • 3 TBS Red Wine Vinegar
  • 1/2 tsp Black pepper
  • 1 tsp Sugar
  • 1 tsp Salt
  • 1 tsp Garlic Powder

 

Directions

Sauce: Line bottom of a large pot with olive oil, add chopped garlic, then squeeze sausage from casing into pot, cut heat to low, and let sausage brown. Add a TBS of basil, TBS of Italian seasoning, 4 large cans of whole tomatoes (stir and break up tomatoes in the pot), add 2 cans of tomato past and two cans of water. Cover with lid and let cook slowly.

Meatballs: Chop a clove or two of garlic, add 1 TBS of Basil and 1 TBS of Italian seasoning and 1 TBS of Fennel, Add a pound of ground round and a half a pound of ground chuck, add two eggs and three cups of Italian breadcrumbs. Use hands to combine all of ingredients. Add a little bit of salt and continue to mix. Roll into balls and drop into sauce pot. Do not stir after you add the meatballs. Let the meatballs cook in the sauce for 4 hours.

Anti-pasta Salad: Put water in pot to boil, add sugar, red wine vinegar, salt and onion, bring to a boil and let boil for 3 minutes and then drain it and sit aside. Chop or tear romaine lettuce and arrange on large serving platter, add flat leaf parsley, artichokes, roasted red peppers, black olives, cherry tomatoes, pepper arcenni. Then drizzle with drained onions.

Dressing: Combine 3 TBS Red Wine Vinegar, Black pepper, Sugar, Salt, Garlic Powder and whist until well mixed. Pour over salad.
